- Party Wings Wings and Seasoning 4½-5 lbs Chicken Party Wings 1 Tbsp Paprika 1 Tbsp Garlic Powder 2 Tbsp Kosher Salt 1 Tbsp Coarse Ground Black Pepper Buffalo Wing Sauce 1 cup Hot Sauce 4 Tbsp Salted Butter Cut into 4 Pieces ¼ tsp Celery Salt ½ tsp Kosher Salt ¼ tsp Coarse Ground Black Pepper Blue Cheese Dip 5 oz Crumbled Blue Cheese ½ cup Buttermilk ¼ cup Plain Greek Yogurt 1 tsp Dijon Mustard 1½ tsp Freshly Squeezed Lemon Juice 1½ tsp Balsamic Vinegar ¼ tsp Kosher Salt ¼ tsp Coarse Black Pepper Combine the wing seasoning together in a mixing bowl. Mix all spices together. Set aside to season the wings. Place the hot sauce, celery salt, butter, kosher salt and black pepper in a small saucepan. Place on medium-high heat. Bring the contents of the pan to a simmer, and reduce to medium heat. Whisk all ingredients together until fully incorporated. Cook for 5 minutes, stirring frequently. Remove from the heat. To prepare the blue cheese dip, place half of the blue cheese, buttermilk, greek yogurt, Dijon mustard, lemon juice, balsamic vinegar, kosher salt and black pepper in a food processor. Blend until smooth. Scrape the edges of the processor down and blend for an additional 30 seconds. Fold in the second half of the blue cheese. Preheat the grill to 275 degrees and adjust for indirect cooking (i.e. do not cook directly over the flames). Using charcoal or pellets will provide the right amount of smoke. If you are using a gas grill, use a smoke tube to get the smoke flavor. Place the wings in a mixing bowl. Add the spice mixture. Thoroughly mix the wings with the spices until evenly distributed. Allow the wings to sit at room temperature for 10 minutes after being seasoned. Place the wings on the grill, preferably the upper rack. Cook for 1½ to 2 hours or until the wings are 185-195 degrees. After 1 hour, flip the wings. Allow the wings to rest for 20 minutes, covered loosely with aluminum foil. - All about the Sides, 3 of 50. My Extra Crispy Onion Rings. Simple and delicious these bad lads are so crispy, I love them. The below is enough for roughly 20 onion rings 2 large onions cut into 1cm thick rings 100g plain flour/AP flour 100g cornflour/starch 1 tsp salt 1 tsp white pepper 1 tsp garlic powder 1 tsp smoked paprika 250-300ml sparkling water/soda water 1 shot of vodka (optional) 100g Panko or any breadcrumbs Oil for frying 1. Remove the inner membrane from the onions if you’ve ever bitten an onion ring and the whole onion comes out and leaves behind the batter the membrane was not removed 2. Chill the onions in iced water while you make the batter 3. Mix the batter ingredients until it’s nice and smooth 4. Dry the onion rings before dipping into the batter then the breadcrumbs 5.
